Indulge in a decadent New Orleans favorite with rich brown sugar and crunchy pecans.
Ingredients:
  • 2 cups packed light brown sugar
  • 1 cup granulated sugar
  • 1 1/4 cups milk
  • 1/4 cup light corn syrup
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla
  • 1 1/2 cups pecan halves (5 1/2 oz)
Instructions:
  • In a sturdy 3-quart saucepan, combine brown sugar, granulated sugar, milk, corn syrup, and salt over medium heat until boiling, stirring constantly. Lower the heat to medium and let it cook for approximately 15 minutes without stirring until it reaches 236°F on a candy thermometer or forms a soft ball that flattens in cold water. Allow the mixture to cool for about 1 hour without stirring until the saucepan is cool to the touch.
  • Stir in vanilla and pecan halves until mixture thickens and coats pecans without losing its shine. Spoon mixture onto waxed paper, evenly distributing the pecans. Allow candies to sit uncovered for 1 to 2 hours until firm and matte.
  • Individually wrap candies in waxed paper or plastic wrap for freshness. Keep stored in an airtight container.
