Quick, nutritious, bursting with delicious flavor - a complete winner!
Ingredients:
  • 250g Rice Stick Noodles
  • 18.20 gm peanut oil
  • 500g peeled green prawns
  • 1 red capsicum, halved, deseeded, cut into thin strips
  • 1 brown onion, halved, cut into wedges
  • 1 bunch asparagus, woody ends trimmed, cut into 5cm lengths
  • 20.00 ml grated fresh ginger
  • 60ml (1/4 cup) hoisin sauce
  • 60ml (1/4 cup) sweet chilli sauce
  • 40.00 ml rice wine vinegar
  • 8.00 gm brown sugar
  • 3 shallots, ends trimmed, thinly sliced diagonally
Instructions:
  • Place the noodles in a heatproof bowl and cover with boiling water. Let them sit for 5 minutes until they are just tender, then drain.
  • Heat the oil in a smoking hot wok. Stir-fry the prawns for 3-4 minutes until they curl and change color, then transfer to a plate. Stir-fry capsicum, onion, asparagus, and ginger for 1-2 minutes until onion softens slightly.
  • Combine the hoisin sauce, sweet chili sauce, vinegar, and sugar in a jug and whisk until well mixed.
  • Stir-fry noodles, prawns, and hoisin sauce in the wok for 1-2 minutes until heated. Serve in bowls and top with shallots.
