Ingredients:
  • 160g dried angel hair pasta
  • 1 small red onion, halved, thinly sliced
  • 1 long red chilli, deseeded, finely chopped
  • 8 large green prawns, peeled, deveined, tails intact
  • 1 bunch asparagus, trimmed, cut into 2cm lengths
  • 82.50 gm dry white wine
  • Shaved parmesan, to serve
Instructions:
  • Boil pasta in a large pot of salted water following package instructions until tender. Save 2 tablespoons of cooking liquid before draining.
  • Heat oil in a large frying pan over medium heat. Sauté onion for 3 minutes until softened. Add garlic, chili, and prawns. Cook for 2 to 3 minutes until prawns turn pink.
  • Add fresh, vibrant asparagus and a splash of aromatic wine. Sauté, constantly stirring, for about 1 minute or until the asparagus reaches the perfect tenderness.
  • Combine the pasta and reserved liquid with the prawn mixture. Season generously with salt and pepper, then toss everything together. Top with parmesan before serving.
