Prawn and chilli farfalle recipe

Delicious and easy pasta dish for busy weeknights.
Ingredients:
  • 375g farfalle pasta
  • 1kg Australian raw banana prawn cutlets, deveined
  • 6 spring onions, thinly sliced
  • 2 garlic cloves, crushed
  • 1/2 tsp dried chilli flakes
  • 125ml white wine
  • 400g can diced tomatoes
  • 40.00 ml chopped dill
Instructions:
  • Cook the pasta in a large saucepan of boiling water according to the instructions on the package until it is al dente. Drain the pasta thoroughly, saving 1/2 cup (125ml) of the cooking liquid.
  • Heat oil in a large deep frying pan over high heat. Add prawns and cook for 5 mins until they curl and change color. Stir in spring onion, garlic, and chilli flakes, cook for 1 min until aromatic. Pour in wine or stock, bring to a boil, and simmer until liquid reduces by half.
  • Combine the tomato, reserved cooking liquid, pasta, and dill in the pan. Stir and cook for 2 minutes until heated through.
  • Portion the pasta into individual serving bowls.
