Savor these tasty rice paper rolls with a flavorful sweet and spicy dipping sauce for a delightful appetizer experience.
Ingredients:
  • 750g medium cooked prawns
  • 16 rice paper wrappers
  • 3 to 4 iceberg lettuce leaves, finely shredded
  • 1 Lebanese cucumber, cut into thin strips
  • 1 small red capsicum, cut into thin strips
  • 1 carrot, peeled, cut into thin strips
  • 250.00 ml coriander leaves
  • 137.50 gm sweet chilli sauce
  • 48.80 gm fish sauce
  • 42.00 gm lime juice
Instructions:
  • Prepare the prawns by removing the shells and deveining them. Keep them separate for later use.
  • Prepare the sauce by mixing all ingredients in a small bowl and setting it aside.
  • Fill a shallow dish with warm water and dip a rice paper wrapper for 10 seconds to soften. Lay flat on a clean surface.
  • Arrange 3 prawns lengthwise on wrapper. Add lettuce, cucumber, capsicum, carrot, and coriander leaves. Drizzle with sauce. Roll up tightly, folding edges in. Place on a plate and cover with a damp tea towel. Repeat with remaining wrappers and filling.
  • Serve rice paper rolls with the remaining delicious dipping sauce.
