Sriracha and coriander prawn sandwiches recipe

Delicious prawn sandwiches with spicy mayo, perfect for lunch or a quick appetizer.
Ingredients:
  • 10 slices white toast bread
  • 125.00 ml finely chopped fresh coriander leaves
  • 163.35 gm whole-egg mayonnaise
  • 20.00 ml sriracha chilli sauce
  • 10.60 gm lemon juice
  • 2 eschalots, finely chopped
  • 400g peeled cooked prawns, finely chopped
Instructions:
  • Prepare the zesty Sriracha and coriander prawn filling by mixing together mayonnaise, sriracha, lemon juice, and eschalot in a bowl. Gently fold in the prawns and season with salt and pepper. Stir until fully mixed.
  • Lay out half of the bread slices on a cutting board. Spread the prawn mixture evenly on the slices. Sprinkle with coriander and cover with the remaining slices.
  • Trim the crusts off sandwiches using a serrated knife, then cut each sandwich into 3 fingers. Arrange on a serving plate and enjoy.
