Sriracha and roasted garlic mayo

Create a tantalizing chili sauce by blending homemade roasted garlic mayo with sriracha.
Ingredients:
  • 1 garlic bulb
  • Olive oil, to drizzle
  • 3 egg yolks
  • 23.40 gm Dijon mustard
  • 50.00 ml apple cider vinegar
  • 250ml grapeseed oil or vegetable oil, approximately
  • 50.00 ml sriracha
  • Zest and juice of 1 lemon
Instructions:
  • Preheat your oven to 180C (160C fan forced).
  • Wrap the whole garlic bulb in foil with a drizzle of olive oil, ensuring it's sealed. Roast for around 30 minutes until soft. Let it cool slightly, then slice off the top and squeeze out the roasted garlic.
  • For a hands-on approach, whisk egg yolks, mustard, and vinegar in a large bowl until thick. Gradually drizzle in oil while whisking steadily to avoid splitting. Stop adding oil when the mixture is thick. Stir in sriracha, lemon zest, juice, salt, and pepper. If too runny, whisk in more oil to thicken as desired.
