Prawn & cucumber sandwiches

Ingredients:
  • 125g unsalted butter, softened
  • 40.00 ml chopped dill
  • 21.00 gm lemon juice
  • 8 large slices white bread
  • 1/2 telegraph cucumber, halved lengthways, thinly sliced
  • 12 large cooked prawns, peeled, de-veined, halved lengthways
Instructions:
  • Combine butter, dill, and lemon juice in a food processor until smooth. Spread bread slices with the flavorful dill butter. Cut out 3 circles from each slice using a 3cm round pastry cutter and arrange on a serving plate.
  • Lay a cucumber slice and a prawn half on each bread round, then sprinkle with sea salt and pepper for a burst of flavor.
