Prawn and ginger sui mai dumplings

Share these delicious dumplings at your next feast.
Ingredients:
  • 400g raw prawns, peeled, deveined, tails removed
  • 20.00 ml minced ginger
  • 1 tsp minced garlic
  • 2 spring onions, white part only, finely chopped
  • 1/2 tsp white pepper
  • 1/2 tsp sesame oil
  • 10.60 gm light soy sauce
  • 1 packet wonton wrappers
  • 1 cm knob ginger, peeled, julienned
  • Chilli sauce, to serve
Instructions:
  • Finely chop prawns or pulse in a food processor with ginger, garlic, spring onion, white pepper, sesame oil, soy sauce, and sugar until thoroughly mixed.
  • Cut the wonton wrappers into large round circles.
  • Take a wonton wrapper and gently cradle it in your hand. Spoon a generous tablespoon of filling into the center of the wrapper. Folding the wrapper around the filling, form a charming flower shape. Moisten your fingertips and press the edges together firmly to seal the dumpling shut. Repeat with the rest of the filling mixture to create more delightful dumplings.
  • Sprinkle with a delicate carrot and ginger garnish. Steam in a lightly oiled steamer over rapidly boiling water for 5-7 minutes. Ensure dumplings are not crowded as they will expand while steaming. Serve promptly with chili or soy sauce.
