Prawn and mango salsa wonton cups

Whip up tasty prawn and mango bites for a fun school's out treat!
Ingredients:
  • 24 wonton wrappers
  • Olive oil cooking spray
  • 2 large mangoes, peeled, finely diced
  • 1 long red chilli, seeded, finely chopped
  • 20.00 ml chopped fresh coriander leaves
  • 31.50 gm lime juice
  • 300g prawn
Instructions:
  • 1. Preheat the oven to 180°C/160°C fan-forced. 2. Coat both sides of wonton wrappers with oil. 3. Place wonton wrappers in holes of two 1/3 cup-capacity muffin pans. 4. Bake for 10 to 12 minutes, rotating trays midway, until golden and crispy. 5. Let them cool in the pans for 2 minutes before moving them to a wire rack.
  • In a bowl, mix together mango, onion, chili, coriander, and lime juice. Place a spoonful of the mango mixture into each wonton cup and add a prawn on top. Serve right away.
