Prawn and soba noodle salad with sesame dressing

Elevate lunch with vibrant prawn & soba noodle salad topped with creamy sesame dressing.
Ingredients:
  • 270g pkt Organic Soba Noodles
  • 2 bunches asparagus, cut diagonally into 3cm pieces
  • 1 Lebanese cucumber, thinly sliced into rounds
  • 1 large avocado, cut into 2cm chunks
  • 1kg (about 24) medium cooked king prawns, peeled, deveined, tails intact
  • 250.00 ml loosely packed small fresh coriander leaves
  • 125ml (1⁄2 cup) Japanese Dressing Roasted Sesame
  • 3 green shallots, thinly sliced into rounds
  • 15g (1⁄4 cup) fried shallots
  • 1 tsp Yeo’s Pure Sesame Oil
Instructions:
  • Prepare the soba noodles according to package instructions in boiling water, adding the asparagus for the final minute of cooking. Rinse with cold water and drain before placing in a large bowl.
  • Combine cucumber, avocado, prawn, coriander, dressing, and half of the green shallot with the noodles. Toss well and transfer to a serving plate. Top with fried shallots, remaining green shallot, and a drizzle of sesame oil before serving.
