Prawn cocktail caesar salad

Fusion of two classic favorites for a hearty appetizer!
Ingredients:
  • 1/2 x 280g Rustic Baguette*, thinly sliced diagonally
  • 20g parmesan
  • 200g mayonnaise
  • 31.20 gm tomato sauce
  • 1 tablepsoon lemon juice
  • 12.20 gm Worcestershire sauce
  • 2 tsp finely chopped dill
  • 1kg cooked prawns, peeled leaving tails intact, deveined
  • 3 baby gem lettuces, leaves separated
  • 1 avocado, stoned, peeled, thinly sliced
  • Dill sprigs, to serve
Instructions:
  • Preheat the oven to 180°C. Arrange baguette slices on a baking tray and give them a light spritz of olive oil spray. Bake for a total of 8 minutes, flipping halfway through, until the bread is golden brown and parmesan is melted.
  • In a small bowl, mix together the mayonnaise, tomato sauce, lemon juice, Worcestershire sauce, and chopped dill.
  • Arrange the bread, prawns, lettuce, and avocado on serving plates. Drizzle with half of the mayonnaise mixture. Garnish with dill sprigs and serve with the remaining mayonnaise mixture on the side.
