Try these fun prawn fennel cups for a unique seafood appetizer at your next party.
Ingredients:
  • 2 small fennel bulbs, fronds removed, reserved
  • 10.60 gm fresh lemon juice
  • 80ml (1/3 cup) kewpie mayonnaise
  • 20.00 gm crème fraîche
  • 20.00 ml finely chopped fresh tarragon leaves
  • 20.00 ml finely chopped fresh chives
  • 12 cooked prawns, peeled, deveined, tails intact
Instructions:
  • Cut the fennel bulbs in half lengthwise, remove the inner layers and core, then soak them in a bowl of water with 1 teaspoon of lemon juice to keep them fresh and vibrant.
  • In a bowl, mix together the mayonnaise, crème fraîche, tarragon, chives, and remaining juice. Season to taste. Cover with plastic wrap and refrigerate for 1 hour until thickened.
  • Dry the fennel bulbs and spread the mayonnaise mixture evenly among the fennel cups. Garnish with prawns and the reserved fronds.
