Prawn cocktail pasta salad recipe

Elevated prawn cocktail transformed into a quick and creamy pasta salad, ideal for entertaining. Ready in 25 minutes.
Ingredients:
  • 300g dried penne pasta
  • 1kg cooked prawns, peeled, deveined, tails intact
  • 1 Lebanese cucumber, halved, thinly sliced
  • 1 avocado, thinly sliced
  • 60g baby leaf salad mix
  • 1 bunch fresh chives, finely chopped
  • 62.50 ml small fresh mint leaves
  • 40.00 ml coarsely chopped fresh dill, plus extra sprigs, to serve
  • Lemon wedges, to serve (optional)
  • 170g (2/3 cup) whole-egg mayonnaise
  • 31.20 gm tomato sauce
  • 18.30 gm Worcestershire sauce
Instructions:
  • Boil the pasta in a large saucepan of salted water as per package instructions until al dente. Rinse with cold water and drain.
  • In a large bowl, combine the mayonnaise, tomato sauce, juice, and Worcestershire sauce to make the dressing.
  • Assemble the pasta, prawns, cucumber, avocado, salad mix, chives, mint, and dill on a platter. Season with salt and pepper. Drizzle the dressing and sprinkle with additional dill. Optionally, serve with lemon wedges.
