Summer Prawn Pasta Salad: A refreshing twist on classic pasta.
Ingredients:
  • 400g linguine
  • 36.40 gm extra virgin olive oil
  • 75g mayonnaise
  • Zest and juice of 1 lemon
  • 40.40 gm pure (thin) cream
  • 5.20 gm tomato sauce (ketchup)
  • 6.10 gm Worcestershire sauce
  • Tabasco sauce, to taste
  • 40.00 ml finely chopped flat-leaf parsley leaves
  • 1 gem lettuce, cut into wedges
  • 12 cooked prawns, peeled (tails intact), deveined
  • 1 avocado, chopped
Instructions:
  • Prepare the pasta as instructed on the packet until al dente, then drain and rinse with cold water. Mix the pasta with oil and let it cool.
  • Whisk together mayonnaise, lemon zest, lemon juice, cream, tomato sauce, Worcestershire sauce, Tabasco, and season to taste in a bowl. Combine two-thirds of the sauce with the cooled pasta and parsley.
  • Divide the dressed pasta among serving bowls, then top with peeled prawns and chopped avocado. Drizzle with remaining sauce, add a lettuce wedge on the side of each bowl, season with freshly ground black pepper, and serve.
