Prawn cocktail skewers with smoky capsicum mayonnaise

Enhance the dish by doubling the ingredients and adding two prawns per skewer for a heartier platter.
Ingredients:
  • 42.00 gm lime juice
  • 20.00 ml fresh coriander leaves, finely chopped
  • 1 avocado, finely diced
  • 24 large cooked prawns, peeled, deveined (tails intact)
  • 8 baby cos lettuce leaves, finely shredded
  • 1 whole roasted capsicum (see Notes)
  • 81.68 gm whole-egg mayonnaise
  • 2.50 gm smoked paprika
  • 21.00 gm lime juice
Instructions:
  • Dry the capsicum with a paper towel and then combine it with mayonnaise, paprika, and lime juice in a small food processor. Blend until smooth.
  • Mix freshly squeezed lime juice and chopped coriander in a small bowl, then gently fold in the ripe avocado.
  • Skewer each prawn, then add a dollop of mayonnaise, a layer of crispy lettuce, and creamy avocado mixture. Enjoy!
