Prawn cocktails with smoky mayonnaise

Elegant holiday appetizer to elevate your gathering.
Ingredients:
  • 375g mayonnaise
  • 3.75 gm smoked paprika (pimenton) (see note), plus extra to sprinkle
  • 15.90 gm lemon juice
  • 3.60 gm smoked salt or regular sea salt (see note)
  • 32 (about 1 kg) Deli Thawed Cooked Peeled Prawns Cutlets, deveined
  • 2 avocados, cut into 1cm cubes
  • 1/3 iceberg lettuce, finely shredded
  • 2 Lebanese cucumbers, peeled, halved, seeds removed, finely chopped
  • 6 spring onions, thinly sliced on an angle
Instructions:
  • In a small bowl, mix together mayonnaise, smoked paprika, lemon juice, and 1/2 teaspoon of smoked or regular salt. Cover and refrigerate until ready to serve.
  • Season prawns generously with the remaining salt and a touch of pepper before setting them aside. Coat avocado in fragrant olive oil and season it with a sprinkle of sea salt and freshly cracked black pepper. Set aside for extra flavor infusion.
  • Distribute lettuce evenly into 8 serving glasses. Add avocado, cucumber, and the majority of the spring onion on top. Place prawns on top and garnish with a generous spoonful of the smoky mayonnaise.
  • Top the prawns with the remaining onion and a sprinkle of smoked paprika before serving.
