Popular dinner-party dish with prawns, spinach, lemon, and a zesty homemade dressing.
Ingredients:
  • 1 kg cooked prawns, peeled, deveined, tails intact
  • 150g pkt baby spinach
  • 56.88 gm extra virgin olive oil
  • 65.63 gm lemon juice
  • 40.00 ml basil, chopped
  • 2 lemons, thinly sliced
Instructions:
  • Assemble prawns, spinach, and lemon slices in separate serving bowls.
  • Prepare the dressing by whisking together the ingredients and seasoning generously with salt and pepper. Drizzle the dressing over the prawns just before serving.
