Pressure cooker bone broth recipe

Quick and flavorful cheat's bone broth for cozy days.
Ingredients:
  • 1.5kg chicken bone pieces (mix of wings and nibbles)
  • 6 sprigs fresh thyme
  • 1/2 bunch fresh continental parsley
  • 2 carrots, halved crossways
  • 1 brown onion, quartered
  • 5 celery sticks
  • 1 celery heart
  • 1 bulb garlic, halved
  • 1 bay leaf
  • 20.00 ml black peppercorns
  • 40.00 ml apple cider vinegar
Instructions:
  • Heat a 3L (12 cup) pressure cooker over medium-high heat. Brown the chicken in batches, then add thyme, parsley, carrots, onion, celery sticks, celery heart, garlic, bay leaf, black peppercorns, vinegar, and browned chicken to the cooker. Pour in 2½ litres (10 cups) of water and bring to a boil, skimming off any scum from the surface.
  • Seal the lid tightly and bring to high pressure over high heat. Lower the heat to low and let it cook for 5 hours. Once done, take it off the heat and allow the steam to release naturally. Finally, carefully open the lid.
  • Strain the liquid into a large bowl, cool it quickly by placing the bowl in a sink or large tub filled with ice water, chill, then discard the solidified fat layer.
