Tender bone-in pork chops with potatoes and carrots cooked in a pressure cooker for a fast and delicious meal.
Ingredients:
  • 4 3/4-inch thick bone-in pork chops
  • 0.25 cup butter, divided
  • 1 onion, chopped
  • 1 cup baby carrots, or more to taste
  • 1 cup vegetable broth
  • 3 tablespoons Worcestershire sauce
  • 4 whole russet potatoes, or more to taste
Instructions:
  • Prepare and assemble all ingredients.
  • Season pork chops generously with a savory sprinkle of salt and black pepper.
  • Melt 2 tablespoons of butter in a pressure cooker over medium-high heat. Brown pork chops in hot butter in batches for 3 to 5 minutes per side. Transfer to a plate.
  • Melt the remaining 2 tablespoons of butter in the pressure cooker over medium heat. Sauté the onion and carrots in the fragrant butter for about 2 minutes. Add the broth and Worcestershire sauce.
  • Place the pork chops back into the pressure cooker pot.
  • Place the pork chops in a steamer basket and top them with potatoes.
  • Secure the lid and set to high pressure for 13 minutes following the manufacturer’s guidelines. Let the pressure naturally build for 10 to 15 minutes. Release pressure naturally for 10 to 40 minutes, then unlock and remove the lid.
  • Serve pork chops and carrots with sliced potatoes on the side.
