Boost nutrients by slow-cooking bones in a pressure cooker for quick, hearty bone broth.
Ingredients:
  • 2kg beef bones (mix of marrow, knuckle and meat bones)
  • 6 sprigs thyme
  • 40.00 ml apple cider vinegar (see Note)
  • 2 carrots, quartered
  • 1 brown onion, halved
  • 2 stalks celery, chopped
  • 4 garlic cloves
  • 1 bay leaf
Instructions:
  • Preheat your oven to 200°C (180°C fan-forced). Spread the bones on a roasting tray and roast for 30 minutes (refer to Note for details).
  • Add bones and fat along with the remaining ingredients to a large pressure cooker, ensuring they are covered with water but not exceeding 2/3 full. Seal the lid and bring it to high pressure on high heat. Lower the heat to low and let it cook for 4 hours. Turn off the heat, allow the steam to release naturally, then carefully open the lid.
  • Strain the mixture into a large bowl, cool rapidly by setting the bowl in a sink or large tub filled with ice water. Chill the mixture, and if desired, remove the hardened layer of fat (refer to Note).
