For a quick bowl of ramen, use quality store-bought broth like those in the fridge section or bone broth for richness and flavor. Order online for convenience.
Ingredients:
  • 2 tablespoons neutral oil
  • 2 cloves of garlic grated or crushed
  • 2.5 cm (1in) ginger peeled and grated
  • 600 ml (21fl oz) chicken bone broth
  • 3 tablespoons white miso
  • 4 tablespoons oat milk
  • 2 tablespoons light soy sauce
  • 2 tablespoons mirin
  • ¼ teaspoon freshly ground black pepper
  • 200 g (7oz) fatty pork mince (ground pork)
  • 2 tablespoons soy bean sauce
  • 1 teaspoon dark soy sauce
  • 1 egg
  • 2 nests fresh or dried ramen noodles
  • 1 handful of bean sprouts
  • 1 small leek finely shredded
  • ½ a toasted nori sheet cut into 4
  • 1 tablespoon furikake
Instructions:
  • Heat 1 tablespoon of neutral oil in a pan over medium-high heat. Add garlic and ginger; stir fry for 30 seconds until fragrant. Pour in chicken bone broth, gently simmer. Add miso paste, oat milk, light soy sauce, mirin, and pepper. Dissolve miso paste. Boil water in a saucepan. In another pan, heat remaining neutral oil, cook pork mince until crispy. Stir in soy bean sauce, dark soy sauce, and noodle water. Cook noodles in boiling water with egg for 6 minutes 45 seconds. Add ramen noodles, bean sprouts. Divide noodles and sprouts into bowls. Peel and halve the egg; place it in the bowl. Pour hot broth over noodles, top with pork, leek, nori, and furikake.
