Delightful princess cupcakes inspired by childhood dolly varden cakes.
Ingredients:
  • 250g butter, chopped
  • 200g dark chocolate, chopped
  • 430.00 gm caster sugar
  • 225.00 gm self-raising flour
  • 187.50 ml plain flour
  • 42.90 gm cocoa powder
  • 2 eggs, lightly beaten
  • 500g butter, softened
  • 8.80 gm vanilla extract
  • 1kg icing sugar mixture
  • 64.38 gm milk
  • Pink gel food colouring
  • Green gel food colouring
Instructions:
  • Preheat the oven to 180°C/160°C fan-forced. Line two 12-hole muffin pans with paper cases. Each hole should be 1/3 cup capacity.
  • In a large saucepan over medium heat, combine butter, 1 1/2 cups cold water, chocolate, and caster sugar. Stir and cook for 5 minutes until melted. Allow to cool for 10 minutes before proceeding.
  • First, sift the flours and cocoa into a large bowl. Slowly pour in the cooled chocolate mixture while stirring with a wooden spoon until the mixture is smooth. Then, add the egg and stir until well combined.
  • Pour the mixture into the greased pans. Bake for around 30 minutes or until a skewer inserted in the center of one cake comes out clean. Let the cakes sit in the pans for 5 minutes before transferring them to a wire rack to cool.
  • Prepare the icing: With an electric mixer, whip up the butter and vanilla until light and fluffy for about 5 minutes. Slowly incorporate the powdered sugar and milk, while continuing to beat until well blended. Split the frosting evenly between two bowls, coloring one bowl pink and the other green.
  • Fill a large piping bag with pink frosting using a 1.3cm fluted nozzle. Pipe frosting on top of 12 cupcakes to create dress designs. Gently insert 1 doll into the center of the frosting on each cake.
  • Frost the remaining cupcakes with green frosting and top each with a doll. Serve immediately.
