Elevate roasted asparagus with prosciutto and zesty lemon for a delicious and easy appetizer or side.
Ingredients:
  • olive oil cooking spray
  • 1 pound fresh asparagus
  • 0.25 pound prosciutto
  • toothpicks
  • 1 lemon, juiced
  • 2 tablespoons extra-virgin olive oil, or to taste
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously spray a baking dish with cooking spray.
  • Snap off tough ends of asparagus spears and wrap 3 to 4 spears with prosciutto slices, securing them with toothpicks. Arrange bundles in a baking dish and drizzle lemon juice and olive oil over the top.
  • Roast asparagus in a preheated oven until crisp-tender for 18 to 20 minutes. Broil until prosciutto is crisp, about 2 to 3 minutes. Finish with a drizzle of lemon juice before serving.
