Savory potato soup with aromatic veggies and herbs like basil and dill.
Ingredients:
  • 5 large potatoes, cubed
  • 1 large carrot, cut into small dice
  • 1 small stalk celery with leaves, cut into small dice
  • 1 small onion, diced
  • 1.5 teaspoons salt
  • water to cover
  • 2 cups milk, or more to taste
  • 0.5 teaspoon dried basil
  • 0.25 teaspoon dried dill weed
  • 1 tablespoon butter
Instructions:
  • In a 2-quart pot, mix the potatoes, carrot, celery, onion, and salt. Add enough water to just cover the vegetables. Boil until the potatoes are tender but not mushy, around 25 minutes. Remove about a quarter of the water from the pot, ensuring no vegetables escape. Stir in the milk, basil, dill, and butter. Season with salt and black pepper before serving.
