Microwaveable puddings - quick, easy, and irresistible!
Ingredients:
  • Melted butter, to grease
  • 90g butter
  • 100g (1/2 cup, firmly packed) brown sugar
  • 30.00 ml finely grated orange rind
  • 55g (3/4 cup) wholemeal breadcrumbs (made from day-old bread)
  • 150g (1 cup) chopped raisins
  • 150g (1 cup) self-raising flour, sifted
  • 250ml (1 cup) fresh orange juice
  • 30g butter, extra
  • 125ml (1/2 cup) pouring cream
  • 55g (1/4 cup) caster sugar
  • 10.00 gm custard powder
Instructions:
  • Prepare four 250ml (1-cup) microwave-safe ramekins by coating them with melted butter. In a bowl, use an electric beater to mix the butter, brown sugar, and 1 tablespoon of orange rind until light and creamy. Gradually add eggs one by one, beating thoroughly after each addition.
  • Add in breadcrumbs and juicy raisins to the mixture, then gently fold in the flour and half of the zesty orange juice in alternating additions until fully mixed.
  • Pour the mixture into the ramekins. Microwave on medium/500 watts/50% power for 5-7 minutes or until a skewer inserted in the centers comes out clean. Let them sit for 2 minutes to cool slightly before serving.
  • In a microwave-safe bowl, melt the additional butter on High for 30 seconds. Stir in cream, caster sugar, custard powder, and the rest of the orange rind and juice. Microwave on High, stirring once, for 3 minutes until thickened.
  • Transfer the puddings onto serving plates and generously drizzle with the custard.
