Spicy spaghetti squash: Quick method to cook and shred squash into noodle-like strands.
Ingredients:
  • 1 spaghetti squash, halved and seeded
  • 2 tablespoons olive oil, divided
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon red pepper flakes
  • salt and ground black pepper to taste
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect baking temperature.
  • Drizzle the interior of the squash with 1 tablespoon of olive oil, then place it cut-side down on a baking sheet.
  • Roast in the preheated oven until the squash is tender, approximately 30 minutes. Allow the squash to cool for 10 minutes.
  • Use a fork to shred the inside of the squash and place it into a bowl. Mix in the rest of the olive oil, parsley, red pepper flakes, salt, and pepper with the shredded squash, then toss well to evenly coat.
