Spicy pulled pork chili with wild rice, white beans, and bacon - a hearty winter comfort dish.
Ingredients:
  • 1 (1 1/2-pound) whole pork loin
  • 0.25 cup red chile paste
  • 1 tablespoon hot sauce
  • 1 teaspoon ground cumin
  • 1 teaspoon ground chili powder
  • 1 (16 ounce) can tomato sauce
  • 1 (16 ounce) can low-sodium chicken broth
  • 1 (16 ounce) can low-sodium great northern beans
  • 6 slices bacon, cut into 1-inch pieces
  • 0.5 cup wild rice
  • 0.25 cup diced onion
  • 0.25 cup diced jalapeno pepper
  • 1 cup shredded Monterey Jack cheese
Instructions:
  • Place the pork loin in a slow cooker. Combine red chile paste, hot sauce, cumin, and chili powder in a small bowl, then rub mixture over the pork.
  • Combine tomato sauce, chicken broth, beans, bacon, wild rice, onion, and jalapeno pepper in a large bowl. Transfer the mixture to a slow cooker, ensuring the pork is evenly coated.
  • Slow cook for 9 to 10 hours until flavors meld together. Shred the cooked pork using 2 forks, then mix back into the sauce in the slow cooker.
  • Sprinkle each serving with shredded Monterey Jack cheese for a gooey finish.
