Elevate your Super Bowl party with irresistibly delicious pulled pork nachos topped with spicy sriracha slaw.
Ingredients:
  • 0.75 cup water
  • 0.25 cup apple cider vinegar
  • 2 tablespoons sriracha sauce
  • 2 teaspoons white sugar
  • 1 teaspoon oregano
  • 1 (14 ounce) package classic coleslaw mix (such as Dole®)
  • 0.5 small red onion, thinly sliced
  • 1 (12 ounce) bag tortilla chips
  • 3 cups cooked pulled pork
  • 2 cups shredded Cheddar cheese
Instructions:
  • In a saucepan, mix water, vinegar, sriracha, sugar, oregano, and salt. Bring to a boil, then remove from heat, stir, and allow to cool for 10 minutes.
  • In a large bowl, mix coleslaw and onion. Drizzle sriracha mixture over the top, stir well, and let it sit as you get nachos ready.
  • Position the oven rack 6 inches below the heat source and preheat the broiler on low, if possible.
  • Layer tortilla chips on a baking sheet, generously top with pulled pork, and finish with a generous sprinkle of shredded Cheddar cheese.
  • Place the nachos in the preheated oven and broil them until the cheese is gooey and bubbly, for approximately 6 minutes. Finish by adding a generous serving of flavorful sriracha slaw on top.
