Pulled Pork Tamale Pie

Quick and convenient tamale pie using pre-made pulled pork for a time-saving dinner option.
Ingredients:
  • 1.5 teaspoons butter, or as needed
  • 1 small onion, minced
  • 2.5 cups prepared pulled pork
  • 1 (15.25 ounce) can whole kernel corn
  • 1 (10 ounce) can diced tomatoes and green chiles (such as RO*TEL®)
  • 1 (4.5 ounce) can diced green chiles
  • 1 (1.25 ounce) package taco seasoning
  • 2 (6 ounce) boxes cornbread mix (such as Martha White®)
  • 1.3333333730698 cups milk
  • 1 (8 ounce) package shredded Mexican-blend cheese
Instructions:
  • Preheat the oven to 350°F (175°C) and generously butter a large casserole dish.
  • Heat oil in a skillet over medium heat. Add onion and cook until softened and translucent, about 5 minutes. Stir in garlic and saute until fragrant, about 1 minute. Add pulled pork and cook until heated through, about 3 minutes.
  • Strain off half of the liquid from the corn and diced tomatoes with chiles. Add everything, including the remaining corn, diced tomatoes with chiles, and liquid, into the pork mixture. Mix in diced green chiles and taco seasoning. Cook until it reaches your preferred thickness and is heated through, approximately 5 minutes. Take it off the heat.
  • Combine the cornbread mix, milk, and eggs in a bowl and whisk until smooth. Place slightly more than half of the batter into the greased casserole dish.
  • Bake the cornbread in a hot oven for 6 to 7 minutes. Take it out of the oven and spread the pork mixture on top. Sprinkle with Mexican cheese and pour the rest of the cornbread batter over it.
  • Bake until the cornbread topping turns a beautiful golden brown, which should take 30 to 45 minutes.
