Quick and easy Mexican meal: Pulled pork tacos with creamy slaw in under 30 minutes!
Ingredients:
  • 480g pkt Pork Ready to Pull Shoulder Apple BBQ Sauce
  • 8 small flour tortillas
  • 400g pkt Mexican Style Salad Kit
  • 200g Avocado Dip
  • 125.00 ml coriander leaves
Instructions:
  • Preheat the oven to 200°C, then prepare the pork according to the instructions on the package.
  • Prepare 2 baking trays with baking paper. Arrange the tortillas in a single layer on the trays. Generously spray with olive oil. Bake for 6-8 minutes, flipping halfway through, until they turn light golden brown.
  • Once the pork and tortillas are cooking, get the salad kit ready by following the instructions on the packet, but only use half of the dressing.
  • Place the tortillas on plates. Garnish with avocado dip and salad, then drizzle with reserved dressing. Add pulled pork and sprinkle with coriander leaves. Serve promptly.
