Delicious spiced pumpkin-nut snack cake topped with cream cheese frosting. Recipe makes two 9x13-inch pans.
Ingredients:
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 2 teaspoons salt
  • 2 teaspoons ground cinnamon
  • 2 cups canned pumpkin
  • 1 cup vegetable oil
  • 4 eggs
  • 2 cups white sugar
  • 1 cup chopped walnuts
Instructions:
  • Preheat your oven to 350 degrees F and generously grease two 9 x 13-inch pans.
  • In a bowl, blend the flour, baking powder, baking soda, salt, and cinnamon. In another bowl, combine the pumpkin, vegetable oil, eggs, and sugar. Gently fold in the flour mixture until just combined, then mix in the walnuts.
  • Pour the batter into the pan and bake in the preheated oven until a toothpick inserted in the center comes out clean, approximately 25 minutes. Let it cool on a wire rack and top with Cream Cheese Frosting.
