Delicious bar with versatile squash option, perfect for desserts or events.
Ingredients:
  • 1 cup vegetable oil
  • 2 cups white sugar
  • 1 (15 ounce) can pumpkin puree
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 0.5 teaspoon ground ginger
  • 0.5 teaspoon ground cloves
  • 0.5 teaspoon ground nutmeg
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C), then generously grease a 12x18 inch half sheet pan.
  • In a big bowl, use a wooden spoon to thoroughly blend the eggs, oil, sugar, and pumpkin. In another bowl, combine flour, baking powder, baking soda, salt, cinnamon, ginger, cloves, and nutmeg. Gently fold the dry ingredients into the pumpkin mixture until just combined. Spread evenly in the pan.
  • Bake in a preheated oven for 25-30 minutes until the bars spring back when lightly touched. Allow to cool before cutting into bars.
