Fall pumpkin bread with raisins and pecans for a flavorful twist.
Ingredients:
  • 1.5 cups all-purpose flour
  • 1 tablespoon baking soda
  • 0.5 tablespoon pumpkin pie spice, or more to taste
  • 0.25 teaspoon baking powder
  • 0.5 teaspoon salt
  • 0.33333334326744 cup raisins
  • 0.33333334326744 cup chopped pecans
  • 1 cup white sugar
  • 0.25 cup butter
  • 1 cup pumpkin puree
  • 0.25 cup orange juice
  • 3 eggs
  • 0.5 teaspoon vanilla extract
Instructions:
  • Prepare your oven by preheating it to 350 degrees F (175 degrees C) and generously grease and flour 2 loaf pans.
  • In a large bowl, gently mix flour, baking soda, pumpkin pie spice, baking powder, and salt. In a separate bowl, coat raisins and pecans with 1 tablespoon of the flour mixture.
  • Cream together sugar and butter with an electric mixer until light and fluffy. Mix in pumpkin puree, orange juice, eggs, and vanilla extract until fully incorporated. Gradually add flour mixture and mix until smooth. Gently stir in raisins and pecans.
  • Divide the batter evenly between the two greased loaf pans.
  • Bake in the preheated oven for 30 to 40 minutes, until the tops spring back lightly when pressed. Allow to cool completely on racks before serving.
