Delicious pumpkin cookies with creamy frosting, ideal for fall cravings and festive occasions.
Ingredients:
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon ground ginger
  • 1 cup unsalted butter, softened
  • 0.75 cup white sugar
  • 0.75 cup brown sugar
  • 2 teaspoons vanilla extract
  • 1 large egg
  • 1 (15 ounce) can pumpkin puree
  • 1 (3 ounce) package cream cheese, softened
  • 0.25 cup unsalted butter, softened
  • 2 cups powdered sugar
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and lightly grease two baking sheets.
  • Combine flour, baking powder, cinnamon, baking soda, nutmeg, and ginger in a bowl and whisk together.
  • Using an electric mixer, blend butter, both sugars, egg, and vanilla in a large bowl until smooth. Mix in pumpkin puree. Slowly incorporate dry ingredients into the pumpkin mixture until well combined; batter will be moist.
  • Scoop spoonfuls of batter onto lined baking sheets, keeping them 2 inches apart.
  • Bake in the preheated oven for 10-12 minutes, switching racks halfway, until cookies are lightly browned.
  • Take out of the oven and allow to cool on the baking sheets for 5 minutes. Then, move the cookies to a wire rack to cool completely, which should take about 25 minutes.
  • Once the cookies have cooled, prepare the frosting by combining cream cheese, butter, and vanilla in a bowl. Use an electric mixer to beat the mixture until it is soft and creamy. Gradually add powdered sugar, about 1/2 cup at a time, until the frosting reaches a smooth and spreadable consistency.
  • Frost the cooled cookies generously.
