Ingredients:
  • 2.8kg butternut pumpkin, peeled, thinly sliced
  • 1 medium brown onion, halved, thinly sliced
  • 0.63 gm ground nutmeg
  • 127.50 gm vegetable liquid stock
  • 3 slices soy and linseed bread
  • 125.00 ml plain flour
  • 20g olive oil spread
  • 82.50 ml pumpkin seeds (pepitas)
  • 37.95 gm walnuts
  • 1/2 tsp dried mixed herbs
Instructions:
  • Preheat your oven to a toasty 200°C/180°C fan-forced. Arrange pumpkin and onion in a generous 10-cup round baking dish. Give them a delicate dusting of nutmeg, then pour over the stock. Bake for about 30 minutes until the pumpkin reaches just the right level of tenderness.
  • Process the bread until roughly chopped, then add the flour, spread, pumpkin seeds, walnuts, and herbs. Pulse until everything is just combined.
  • Sprinkle the breadcrumb mixture evenly on top of the pumpkin. Bake for about 15 minutes, or until the top is golden brown. Serve and enjoy!
