Creamy pumpkin custard topped with crunchy peanut brittle for a decadent dessert.
Ingredients:
  • 1 can (15 oz) pumpkin (not pumpkin pie mix)
  • 1 can (14 oz) fat-free sweetened condensed milk (not evaporated)
  • 4 eggs
  • 1 teaspoon pumpkin pie spice
  • 1/8 teaspoon salt
  • 1/4 cup chopped peanut brittle
Instructions:
  • Preheat your oven to 325°F. Grease 6 (6-oz) custard cups or ramekins with cooking spray.
  • Combine all ingredients in a blender, excluding peanut brittle. Blend on high speed until smooth. Divide mixture into custard cups, then place them in a 13x9-inch pan. Fill the pan with very hot water until it reaches within 1/2 inch of the tops of the cups.
  • Bake for 45 minutes or until a knife inserted halfway between center and edge comes out clean. Gently remove the cups from the water using tongs and cool completely on a rack.
  • Chill in the refrigerator for at least 8 hours. Just before serving, top each custard with a generous sprinkle of 2 teaspoons of peanut brittle.
