Autumnal weekend breakfast delight.
Ingredients:
  • 8 eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoons ground cinnamon
  • 0.5 teaspoon ground cloves
  • 0.25 teaspoon ground nutmeg
  • 1 tablespoon white sugar
  • 1 (15 ounce) can pumpkin puree
  • 1 loaf Texas toast thick-sliced bread, cut into 1-inch cubes
  • 0.33333334326744 cup brown sugar
  • 0.25 teaspoon ground cinnamon
  • 2 tablespoons all-purpose flour
  • 1 tablespoon butter, softened
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease a 9x13-inch baking dish.
  • In a bowl, whisk together eggs, vanilla extract, 2 teaspoons of cinnamon, cloves, nutmeg, and white sugar. Beat in the pumpkin until fully mixed.
  • Spread out the bread cubes in an even layer in the baking dish that you have prepared. Drizzle the pumpkin mixture over the bread cubes and delicately mix to ensure they are coated evenly.
  • Combine 1/3 cup of brown sugar, 1/4 teaspoon of cinnamon, flour, and butter in a small bowl. Mix with a fork until crumbly, then sprinkle over the bread cubes.
  • Bake until the top is golden brown, about 30-40 minutes in a preheated oven.
