Elevate classic hummus with vibrant pumpkin puree. Perfect for dipping pita bread and veggies.
Ingredients:
  • 1 Tbsp. olive oil
  • 2 cloves garlic, minced
  • 1 tsp. cumin
  • 1 (15-oz.) can chickpeas, rinsed anddrained
  • 3/4 cup canned pumpkin
  • 1/4 cup water
  • 1/4 cup lemon juice
  • 1/2 tsp. salt
  • 1/8 tsp. each cayenne, cinnamon, andblack pepper
  • Green onions
  • Pita bread
  • Cut-up vegetables such as bell pepperstrips, carrots, and celery
Instructions:
  • In a skillet set over medium heat, sauté garlic and cumin in olive oil until fragrant, approximately 30 seconds.
  • Combine the garlic mixture with chickpeas, pumpkin, water, lemon juice, salt, cayenne, cinnamon, and black pepper in a food processor or blender. Process until silky smooth.
  • Pour into a stylish serving bowl. Drizzle with extra olive oil and a sprinkle of fresh green onions. Enjoy with warm pita bread and an assortment of crisp veggies.
