Hearty pumpkin bread with rolled oats, spices, and fall flavors - a moist and delicious treat!
Ingredients:
  • 0.66666668653488 cup vegetable oil
  • 4 eggs
  • 1 (15 ounce) can 100% pure pumpkin
  • 0.66666668653488 cup white sugar
  • 0.66666668653488 cup brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 0.5 teaspoon ground cloves
  • 0.5 teaspoon ground nutmeg
  • 3 cups all-purpose flour
  • 1.75 cups old-fashioned rolled oats, divided
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and lightly grease two 8x4-inch loaf pans.
  • In a large bowl, mix oil, eggs, and pumpkin until combined. Add white and brown sugar, baking powder, salt, cinnamon, cloves, and nutmeg. Blend in flour and 1 1/2 cups of oats until well incorporated.
  • Transfer the batter to the loaf pans, then generously sprinkle the tops with the remaining 1/4 cup of oats and gently press them into the batter.
  • Bake in the preheated oven for 40-45 minutes or until a knife inserted in the middle of the loaf comes out clean. Cool for 15 minutes before slicing.
