Wholesome pumpkin-oatmeal bars: a delightful blend of pumpkin bread and chewy oat bars, ideal for a snack or quick dessert.
Ingredients:
  • cooking spray
  • 1 (16 ounce) can pumpkin puree
  • 1 cup brown sugar
  • 2 eggs
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon ground cloves
  • 3 cups rolled oats
  • 1 cup raisins
Instructions:
  • Preheat the oven to 350°F (175°C) while coating a 9x11-inch pan with cooking spray.
  • In a large bowl, whisk together pumpkin puree, brown sugar, and eggs until velvety and smooth using an electric mixer.
  • Combine flour, baking soda, cinnamon, nutmeg, and cloves in a separate bowl. Gradually mix the flour mixture into the pumpkin mixture until fully combined. Add oats and raisins, then evenly spread the batter in the prepared pan.
  • Bake in the preheated oven for 20-25 minutes until a fork inserted comes out clean. Let it cool completely, then cut into 20 bars.
