Pumpkin pecan oat granola sweetened with agave syrup for a hearty, energizing breakfast.
Ingredients:
  • 6 cups rolled oats
  • 1 cup freshly ground flax seed meal
  • 1 cup steel-cut oats
  • 1 cup oat bran
  • 0.5 cup wheat germ
  • 1 cup chopped pecans
  • 0.75 cup agave nectar
  • 0.5 cup canned pumpkin
  • 0.5 cup brown sugar
  • 0.5 cup water
  • 2 tablespoons canola oil
  • 2 tablespoons vanilla extract
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon sea salt
  • 1 cup finely chopped dates
  • 1 cup miniature chocolate chips
Instructions:
  • Preheat your oven to a low and gentle 275 degrees F (135 degrees C) and prepare your baking sheets by lining them with parchment paper.
  • Combine rolled oats, flax seed meal, steel-cut oats, oat bran, wheat germ, and pecans in a large bowl. In another bowl, whisk together agave nectar, pumpkin puree, brown sugar, water, canola oil, vanilla extract, pumpkin pie spice, and sea salt until the sugar and salt dissolve. Pour the mixture over the dry ingredients and stir well to coat. Spread the mixture evenly on prepared baking sheets.
  • Bake in a preheated oven for 1 hour, stirring every 20 minutes. Add dates to granola and bake until lightly golden brown, 20 to 30 minutes more, stirring once. Allow to cool completely, then mix in miniature chocolate chips. Store in an airtight container.
