Upgrade classic French toast with a crunchy granola coating.
Ingredients:
  • 4 eggs
  • 1/2 cup milk
  • 1/4 cup sugar
  • 1/2 teaspoon vanilla
  • 3 cups Nature Valley™ oats 'n honey protein granola
  • 3 to 4 tablespoons vegetable oil
  • 8 slices whole wheat bread
  • 1 cup real maple or maple-flavored syrup
Instructions:
  • Combine eggs, milk, sugar, and vanilla in a large bowl and whisk until fully blended.
  • Pulse granola in a food processor until large pieces are broken up and a coarse meal forms. Transfer to a shallow bowl.
  • In a 10-inch nonstick skillet, warm 1 tablespoon of oil on medium-low heat. Dip bread slices in egg and granola mixture, ensuring both sides are evenly coated. Place 2 slices in the skillet and cook until deep golden brown for 2 to 3 minutes. Flip and cook for another 2 to 3 minutes. Repeat with the rest of the bread slices, adding oil as necessary.
  • Drizzle each slice with 2 tablespoons of syrup before serving.
