Quick and tasty Cinnamon Raisin Granola Muffins are ready to enjoy in just 25 minutes.
Ingredients:
  • 2 cups Cascadian Farm® organic cinnamon raisin granola
  • 1 1/2 cups Gold Medal™ all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 2 eggs
  • 1 cup buttermilk
Instructions:
  • Preheat oven to 350°F and generously coat 18 regular-size muffin cups with cooking spray.
  • Combine 1 1/2 cups of granola with flour, baking powder, baking soda, and salt in a large bowl. In a separate medium bowl, whisk together eggs, brown sugar, buttermilk, oil, and vanilla until combined. Gently fold the egg mixture into the dry ingredients until just combined.
  • Fill muffin cups two-thirds full with batter and generously sprinkle with remaining 1/2 cup granola for a delicious and crunchy topping.
  • Bake for 13 to 15 minutes or until a toothpick inserted in the center comes out clean. Transfer to cooling racks and serve warm.
