Easy crunchy coconut granola - perfect for breakfast or snack on-the-go!
Ingredients:
  • 5 cups rolled oats
  • 2 cups almonds
  • 2 cups unsweetened shredded coconut
  • 1.25 cups maple syrup
  • 0.5 cup coconut oil
  • 1 egg white
  • 2 tablespoons chia seeds
  • 1 teaspoon cinnamon
  • 1 teaspoon cardamom
  • 1 teaspoon kosher salt
Instructions:
  • First, assemble all the ingredients needed for the recipe. Then, preheat the oven to 350 degrees F (175 degrees C) and prepare two rimmed baking sheets by lining them with parchment paper.
  • Mix all ingredients in a large bowl, ensuring oats and nuts are thoroughly coated. Spread mixture evenly onto prepared baking sheets.
  • Bake until beautifully golden brown for about 40 minutes. Stir the granola and rotate the pans at the 20-minute mark to ensure even browning.
  • Allow to cool completely before transferring the mixture into airtight containers or jars. Store the mixture at room temperature for up to two weeks. Enjoy with milk, yogurt, or your favorite fruits such as berries, peaches, mango, or pineapple.
