Fall-inspired pumpkin pancakes with ginger, cinnamon, and allspice. Can use fresh or canned pumpkin. Ideal for a cozy breakfast.
Ingredients:
  • 1.5 cups milk
  • 1 cup pumpkin puree
  • 1 large egg
  • 2 tablespoons vegetable oil
  • 2 tablespoons vinegar
  • 2 cups all-purpose flour
  • 3 tablespoons brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground allspice
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground ginger
  • 0.5 teaspoon salt
  • cooking spray
Instructions:
  • Prepare all ingredients.
  • Combine milk, pumpkin puree, egg, oil, and vinegar in a large bowl, stirring until thoroughly mixed.
  • Combine flour, brown sugar, baking powder, baking soda, allspice, cinnamon, ginger, and salt in a separate bowl. Mix into pumpkin mixture until just combined.
  • Coat your griddle or frying pan with cooking spray and heat it over medium-high heat.
  • Scoop 3 to 4 tablespoons of batter onto the hot griddle for each pancake and gently flatten it with a spoon.
  • Cook until small bubbles form, approximately 2 minutes.
  • Continue cooking until the edges are crispy and turn a beautiful golden brown color, approximately 2 minutes more. Repeat the process with the rest of the batter.
  • Indulge in while piping hot!
