Quick and easy Indian pumpkin curry with yogurt sauce - a delicious vegetarian dinner option in just 30 minutes.
Ingredients:
  • 18.40 gm vegetable oil
  • 1 red onion, cut into thick wedges
  • 150g curry paste
  • 700g Kent pumpkin, peeled, cut into 4cm pieces
  • 400g can crushed tomatoes
  • 250ml vegetable stock
  • 200g green beans, trimmed, cut into 3cm lengths
  • 300g yoghurt
  • 5.00 gm ground cumin
  • Salt and pepper
  • Basmati rice, to serve
  • 62.50 ml coriander sprigs, to serve
  • Lemon wedges, to serve
Instructions:
  • In a large saucepan over medium heat, warm the oil. Stir in the onion and curry paste, cooking for 2 mins until fragrant. Toss in the pumpkin, stirring for 1 min until coated. Pour in the tomato, stock, and ½ cup (125ml) water, bringing to a simmer. Cover and cook for 10 mins until the pumpkin is almost tender. Add the beans and cook for an additional 5 mins until the pumpkin is tender and the beans are vibrant green and crisp-tender.
  • In a small bowl, mix together yogurt, cumin, salt, and pepper until well combined.
  • Serve the rice and curry in individual bowls, garnish with fresh coriander, and accompany with raita and lemon wedges.
