Quick and flavorful pumpkin curry with yogurt, a delicious vegetarian dinner in 30 minutes.
Ingredients:
  • 18.40 gm vegetable oil
  • 1 red onion, cut into thick wedges
  • 700g Kent pumpkin, peeled, cut into 4cm pieces
  • 250ml vegetable stock
  • 200g green beans, trimmed, cut into 3cm lengths
  • 300g yoghurt
  • 5.00 gm ground cumin
  • Salt and pepper
  • Basmati rice, to serve
  • 62.50 ml coriander sprigs, to serve
  • Lemon wedges, to serve
Instructions:
  • In a large saucepan over medium heat, heat the oil. Stir in the onion and curry paste, cook until fragrant, about 2 minutes. Toss in the pumpkin, cook until coated, about 1 minute. Pour in tomato, stock, and ½ cup (125ml) water, bring to a simmer. Cover and cook for about 10 minutes, stirring occasionally, until pumpkin is almost tender. Add beans and cook for an additional 5 minutes, or until pumpkin is tender and beans are bright green and tender-crisp.
  • Mix tangy yoghurt with aromatic cumin in a small bowl, and add a pinch of salt and pepper for a burst of flavor.
  • Distribute the rice and curry into individual serving bowls. Garnish with fresh coriander sprigs and accompany with raita and lemon wedges for serving.
