Festive pumpkin spice cookies perfect for gifting or holiday treats.
Ingredients:
  • 1.5 teaspoons baking soda
  • 1 (15 ounce) can pumpkin puree
  • 1 cup unsalted butter
  • 1 cup white sugar
  • 1 cup packed brown sugar
  • 2 eggs
  • 2.5 cups all-purpose flour
  • 2 tablespoons ground cinnamon
  • 1 tablespoon ground ginger
  • 0.5 tablespoon ground nutmeg
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground cloves
Instructions:
  • Preheat your oven to 375°F (190°C) for the perfect cooking temperature.
  • Cream together pumpkin, butter, white sugar, and brown sugar using an electric mixer until smooth and creamy. Then, mix in the eggs.
  • Combine and mix flour, cinnamon, ginger, nutmeg, baking soda, baking powder, salt, and cloves. Add to pumpkin batter and chill dough for 1 hour.
  • Shape dough into 1-inch balls and arrange on ungreased baking sheets. Press each ball down with a fork to create a classic crisscross pattern.
  • Bake in the preheated oven for about 10 minutes, until cookies are golden with set edges, being careful not to overbake.
