Upgrade classic bars with irresistible pumpkin and cream cheese fillings using Betty Crocker™ sugar cookie mix.
Ingredients:
  • 1 pouch (17.5 oz) Betty Crocker™ Sugar Cookie Mix
  • 1/4 cup cold butter
  • 4 oz (half of 8-oz package) cream cheese, cold
  • 4 oz (half of 8-oz package) cream cheese, well-softened
  • 1/4 cup plus 1 tablespoon canned pumpkin (not pumpkin pie mix)
  • 2 tablespoons sugar
  • 1 tablespoon Gold Medal™ all-purpose flour
  • 1/2 teaspoon pumpkin pie spice
Instructions:
  • Preheat your oven to 350°F and generously coat the bottom and sides of a 13x9-inch pan with cooking spray.
  • In a large bowl, combine cookie mix with butter and 4 oz cream cheese using a pastry blender or fork until the mixture is crumbly with pea-sized crumbs. Set aside 1 cup of the mixture for the topping. Press the remaining mixture firmly and evenly into the bottom of the pan.
  • Combine 4 oz cream cheese, sugar, pumpkin, and flour in a small bowl. Mix in pumpkin pie spice until creamy. Evenly spread over the Cookie Base in the pan and top with reserved crumbs for the Topping.
  • Bake for 25 to 30 minutes, or until the edges turn a beautiful golden brown. Allow the dish to cool in the pan for about 30 minutes. Use a metal spatula to gently loosen the edges, then cut into 4 rows by 3 rows.
